Broccoli Brown Rice Bowl With Fried Egg and Red Pepper

BROCCOLI BROWN RICE BOWL WITH FRIED EGG AND RED PEPPER

Makes dinner for 2
***This is my recipe that is a variable of Rice Bowl With Fried Egg and Avocado***



Ingredients:
  • broccoli, thinly chopped
  • 1 cup cooked brown rice
  • 1 tablespoon rice vinegar
  • Kosher salt, freshly ground pepper
  • 2 ½  tablespoons olive oil (½ =rice, 2=red pepper)
  • 2 large eggs
  • 1 red pepper, chopped
  • Garlic powder
  • Onion powder
  • Hot sauce (optional)

Preparation:
1. Cook brown rice according to directions.
2. Steam broccoli.
3. Saute red pepper in 2 tbsps olive oil, salt & pepper.
4. When rice is done, fluff with fork, then mix in broccoli.  Add 1 tbsp of rice vinegar and ½ tbsp of olive oil. Add desired amount of garlic powder and onion powder. Mix. Keep warm.
5. Cook eggs so they are separated from each other.  Make sure not to overcook the yolk.
6.  In plate or bowl, have rice cover about ¾ of the dish.  Add the red peppers on the ¼ side.  Then top off with cooked egg.  Add salt & pepper.  Maybe some parsley for garnish.
